saunter, sourdough bread, and sunflower cookies

Saturday did a 5k walk with running friend and we walked it, catching up on life. Goal wasn't on time, but friend time. It was soo windy and at 32F, it made it feel so cold.  Last year it snowed during the event. It is about memories!

Experimented this last week.
Sour dough starter and bread. Will exhaust this starter, bake, freeze, and go on. Am reminded that while SD is fine, I don't love it as much as other bread can make. It is fun to make though.

Used King Arthur flour's recipe for gluten free sourdough starter.

Used https://joannaoverly.com/gluten-free-sourdough-bread/ recipe for bread, but don't use psyllium and instead added milled chia to bread mix after letting the milled chia sit in the water a little to absorb the liquid.

First loaf was baked 60 min (as recipe said) on a cookie sheet. It wasn't done in middle so it fell after a while.

Second loaf baked yesterday and poofed wonderfully. Baked for 75 minutes in my Staub ceramic pan, so held its side shape and poofed up.
Today I'm letting another loaf set, and also two long baguettes. Will bake tonight (after collegiate women's basketball final game).

Yesterday made up Sunbutter cookies, recipe from Sunbutter which cuts baking soda for a good reason! Refrigerated dough overnight. Baked those up today. Yummy! Plenty to freeze for snacks.

Have feet will travel, broken wing

Training was not good this winter. January I had an awful cold and on day four I went to the doctor. She pretty much rolled her eyes at me, but ordered some tests that I had to go to another facility to have done. I went there, they didn't do them. I had to go to the ER to have them done.  I went home to rest and feel like I was dying.  Fever, wicked chest issue. Had to sleep sitting up in the chair because my throat would get irritated. I could only take shallow breaths. Friday afternoon I listened to my voice mail . I didn't even recall my phone ringing. Who was it? That would be my doctor calling Wednesday evening with an apologetic sound in her voice. I had RSV and she said I 'might' need to go to the hospital if I got worse. Gee, thanks lady.  This is a wicked respiratory virus that babies and elderly folks get. I have no idea how I got exposed. I guess that bottle of Purell in the car for use after shopping just didn't cut it!

I canceled a week of physical therapy for my plantar fasciitis because of the illness.

February had to be better, right? As it happens, it takes several weeks for your body to feel normal after RSV. Then The Mike got ill. Then I got a cold.  I also 'graduated' from physical therapy and was told to continue with stretches at home.  I bought a square foam cushion like we used in PT and also a round disc that we used. When I walk in/out of one of the rooms in the house I have to use these  for an obstacle course.  I use them regularly as well, but it's added bonus for going in/out of that room.

Before I knew it, March was here!  HOW did that happen?  I had a half! I didn't buy race insurance because I had to be in DC anyway and I had trip insurance if I was going to not make the trip.  Guess there is a reason why I hovered over the race insurance button last fall!
Cool tank tops with racer names.
I love this idea but I wish my name was on a purple or pink shirt instead of the grey :-)

How excited can a walker be?
WOO HOO!  This was going to be an attempt at running some, and walking most, and I knew that. I knew my time wouldn't be great, but that I was getting it done.  I have gained about ten pounds since last spring when my plantar fasciitis took hold. This was essentially a redemption for me, since November's Tulsa run also was still on bad PF foot.
The Route

The snow
Friday's weather was awful and I was so thankful that was Friday and not Saturday!  Rain, sleet, snow--and sooo cooooold.
It brought a smile to my face to walk out of the expo and see people twirling in the light frozen precipitation--it wasn't heavy enough to show up in photos of it falling. On the metro from the airport, there was a couple from Florida heading straight to the expo (I stopped at my hotel first). I am sure they might have been a couple twirling in the snow.  Unless we have to drive in it or shovel it, most enjoy the first flakes of snow.

The pre race dinner
Outback salmon is my go-to for prerace meals. Protein, some carbs, and not heavy in the digestive track for Saturday. Had an issue today for the first time ever!  My salmon wasn't done in the middle.  Sent it back and my meal was comped. Um, OKAY.

Flat Quirky
The Quirky Gluten Free runner runs with cancer awareness these days. While my sister is a breast cancer survivor (pink) and I am a melanoma cancer survivor (black), I run for my mom and the other 45,000 people each year who will die from pancreatic cancer. 9% survival rate is not good enough. If you know someone who is diagnosed, or needs help, visit www.pancan.org/patientcentral for information on local to you doctors, treatments, so much more, and a listening ear.  If you know someone impacted by melanoma cancer, visit www.melanoma.org  for more information and assistance. There is so much information that needs to be shared--including visiting a dermatologist and oncologist who KNOW melanoma.

The Blue Mile.
The most solemn mile on the steepest/toughest and quietest part of the course. What we do does not compare.
The course  had some rough streets-one was a really rough street, overly filled mounds of asphalt right next to a nice hole--and beautiful scenery. It was not the same course I had run a few years ago and that was great. It made it new for me.
Before the race I was feeling bad because I hadn't trained and I couldn't believe I was going to do a half marathon without training. Ten years ago I would have been laughing had you told me that!  Today I know that a half or full or ultra is about training, but also about preparation, mental attitude, perseverance and determination.  People who haven't done a race don't understand, but those who have know that perseverance and determination will get us all past that wall we inevitably encounter!

Just before the race I decided to post on my personal FB page that I was doing this race. I needed some positive vibes on a chilly morning (chilly, but not as cold as Friday was!). I walked over to the start too early, and so there was standing around in between tall buildings where the wind can seem colder.  I had a good first 5K to the race, running and walking, and enjoying the sites. The next part to the 10K was okay time (slowed slightly from the 5k) and I was still feeling good.  Mile 8 my Plantar Fasciitis poked its head out and said "watch it". I concentrated on walking with rolling my foot as I learned in physical therapy. I did that for a couple miles. My foot was feeling better. The tips I learned helped --though I'm wondering how I'll do a half and full back to back this summer! Then when I was just moving along and thinking of some things I hear my name!   I look around and see a friend who came out to see if she could spot me (and she had to walk her dog!).  That was such a pick me up!  The  next few miles to the finish were a run/walk/run/walk mix to carry me through. My time was slower than I was wanting, but it was a finish with no visit to the med tent!

Thankfully these were moving stairs
After the race, I headed to Five Guys for lunch--and was told that I'd be the 'last bun' because their truck was late. I laughed and said I wasn't getting the bun and they could give it to someone else.  I was so thankful that the escalators at the metro stops were working!

The City Tap House
The next night I met up with friend at The City Tap House. There are a couple locations within DC. Friend said the beer was good, the food was great, my burger and salad was great and what I needed after a light lunch of fish at the conference.  Conversation and catching up was wonderful.

My conference was fabulous and I learned a lot. Then it was time to head home. Heading west it was interesting to see how the landscape changed. I saw ice on Lake Michigan as my flight came in for arrival.

Connecting flight home was on time, and the clear fields outside of Chicago gave way to the snow covered fields of home.

Well played Rock 'n' Roll series!

Me heading to expo : you've done RNR before. You dont need to buy anything.

Me at expo: OMG this shirt has runner names on it!  (silent shout) I found mine!   I *must* buy!

Me in checkout line:  Hey, I have been looking for a large bottle opener for traveling,  to open Coca-Cola Mexican glass bottles. (real cane sugar formula)

Dang. Need to buy this new version of the glass too.

All bought... because of that tank!

Well played indeed.

As I write this, I am mentally prepping for my surgery later today for carpal tunnel.  Apparently this is what is bothering my wrist since the car crash of Nov 2015.  I have a hard time understanding how carpal tunnel is responsible for so much, but this is what the docs tell me. I fear I'll get this part fixed and it'll still be something else.

Last night I prepped food for a bit, froze some prep stuff as well as lasagna and chicken breasts. To improved health and one foot in front of the other.!

First run of the year. . . and yes it's the 23rd. . . and look at your body!

I had my first run of 2015.  Sad to say that it's taken 23 days into the month/year to get it done.

January 1st I was horribly cold. Went to the gym with hubby on the 2nd (I wipe down machines before and after my use with antibiotic wipes that the gym has on hand for same purpose). I was feeling a little slugglish, but kind of threw it off.  I did weights and a bit of the rowing machine. Saturday the 3rd I woke up with a horrid chest congestion and cough, which moved to the sinuses and basically kept me down for two weeks. I missed the first week of yoga due to the crud.

Then the 'ta da' feeling and I was feeling awesome last week. Woke up the 11th and I could breath and not cough every couple of minutes.  I got out of the house, ran some errands and then Friday I hacked again and thought. oh no.  I made an appointment with my doc for this past Monday, the 19th, and glad I did. I had to see her for that and something else we discovered Friday night.   Doc fixed me up with an RX for a sinus infection!  . . . and I go back on Monday for something unrelated to that.  Tuesday, the second day of the RX I was feeling SOOOO much better. It was like awakening for the first time in weeks. It was like knowing recovery after a gluten attack. It was like sunshine, and daisies, and butterflies. (cue the trumpets and harps).
Like a big sunny, happy, sunflower.
I didn't abstain from exercise *completely*.  Well, most of the time I did when I was sick, but I had shoveled snow several days (even though The Mike told me not to).  I did walk a few times on the treadmill.

Needless to say, I was wanting to get back to running, but decided I should still be taking it a little easy and easing into the program again.  Yoga two days last week in class, two days this week in class and I thought "I think I'm ready".  I was actually planning to run yesterday after yoga, but then we did the pigeon pose and I've been told not to run after doing those hip opening/flexing positions.

Today I got dudded up in my purple pancreatic cancer fighting clothes. Purple Athleta pants, purple (ahen) Lululemon tank and got on the treadmill during The Price Is Right.  I walked during the show and ran during the commercials.  Sounds simple. Sounds easy. WHOA.  Hard stuff and I wasn't even running fast.  Definitely going to take time to come back from the days off of the feet and hopefully it won't take too long.
All red in the face after just a few running moments.
But wait, there's another snafu.  Remember where I said I talked to the doctor about another issue?  Friday night hanging on the couch, under the electric blanket-- which I got out on 1/1 when I was freezing and now think, "why don't I have this out every winter?!"--- when my left pinkie toe started itching my ring finger toe.  It felt like a hang nail type of thing. Couldn't shake the feeling and finally hoisted the foot up, and inspected and found the "chocolate" mark below.
ARGH.  What is THAT??!!!
No, not a smudge of sock lint. No, not anything that's coming off, and EEEK, it looks like Saturn, sort of round at the top and bottom and spreading around the middle like rings.  Saturday I had lunch with a friend and she said, 'it's probably fungus. There are lots of toe fungi".  Um, good? But I had no clue where I'd have picked up something like that.

Showed it to the doctor (you know, they just *adore* when patients go in for one thing and ask them about a gazillion other things while we're there and their appointment goes from five minutes to thirty minutes!), and she said, "it's not fungus, come back next week and I'll remove it for you and send it out (to see what it is).

Here's the thing I just learned at the beginning of 2014 thanks to a Facebook page for my #1 illness, Colitis, that thanks to the medication I'm on, the infusion I get every eight weeks, that I am more likely to get weird skin things.  Hmmm, in the eight years I'd been on Remicade, my GI never mentioned that to me. Sure, my PCP always says to stay out of the sun, stay out of tanning beds, not to sunburn, but hey, she's a PCP, she's *suppose* to say those things. I was shocked when I saw this tidbit of information on the CCFA FB page.  I asked my GI's office about it and was given the 'eh, it's just something to be aware of'.  I guess it's just something that is abstract in people's minds? not really important to tell a person?  Kind of like the whole part they didn't tell me that I'd be on Remicade for life.   I was on another immunosuppressant before that time and none of the three GIs I'd seen for that had ever mentioned anything about skin issues.  I mean, I *know* I'm at increased risk for colon cancer, hence the colonoscopies every two years, but another thing I didn't even know about!
From the CCFA page of 2014
"Today is  #WorldCancerDay.  [explanation of UC and Crohns]. . . Also, the rate of non-melanoma skin cancer and melanoma are increased compared to the general population among patients with IBD taking immunosuppressive medications such as azathiprine [Imuran]6-mercaptopurine [Purinethol]methotrexate, and anti-TNF agents [Remicade, Enbrel, Humira,Cimzia, and Simponi] . . . ."
What?  I've been on Imuran from 1994 to 2006 and Remicade since 2006.

I will be putting this out of my mind until I know what is what and if there's anything to worry about, but it's going to be hard.

Anyway, I ran today. Maybe I'll run tomorrow. I'll run Sunday and Monday and then who knows? And I'll be excited by any progress I make on running. . . running more than  a two minute commercial break will be exciting!  One short day I'll be running  more and walking less and then I'll be all running again.

I'm not sure how the biopsy will go or how my toe/foot will feel and I doubt I'll be able to wear my Injinji toe socks for a while.

. . . must remember to wear a slip on sandal on Monday. ..in Iowa. .. in January.  Maybe I'll go buy those weird socks that have the four toes together and then a separate toe slot for the big toe. . .then I can wear those with my toe catching Born sandals?  lol.  That'll look swell.

Since pancreatic cancer is close to my heart, and the fourth leading cause of cancer deaths in the USA, I'll leave you with this. If you know anyone who is fighting pancreatic cancer, have them contact PALS at the below information. Patient And Liaison Services can help those who are fighting cancer by being there for them and talking about treatment options.

January is National Pancreatic Cancer Clinical Trials Awareness Month!

Sometimes it's gluten and sometimes it's not. Birthday, race, and food

The last of one age group category. . .

The 12th of July I was pumped up for my last race in one age bracket.  I'd be turning a 'zero' birthday a few days later. I had my things laid out the evening before. Figured I'd ride my bike over to the race start.  Morning came and with it, rain, which was in the forecast.  I decided to still ride my bike over. Just as I was getting ready to leave the garage, a lightning bolt cracked and I said, "nope, I'm driving".  Sure, you can call me a chicken if you want :-).

The energy of the race as fabulous. It was a new event in my area, strictly a 10k. Cool weather was a plus at the start and the race followed the recreational trails in the area. This meant we went through tree lined areas. During the hot summer months it normally is grand. During mosquito infested times with no breeze and humidity, it is not.  I finished in 1:09:42 which was better than my first ever 10K, but I know it's not my best time. It's hard to get the mind around, "I was faster than this four years ago, but I haven't been in that position for four years. THIS is you NOW."  It's a mantra I repeat often. THIS is me NOW.  I cannot compare myself to what I did before, if my health has changed, or I got a bug or something, and no one else can either. Plus, I like to think mom was watching over me and the race. The finish time numbers correlate to her.

My "zero" birthday cake
Betty Crocker chocolate cake mix, two 8" rounds,
with Hershey s'mores palm oil/gluten free icing
This past weekend I went to a county fair --you can take the gal off the farm, but she will still be a farm girl at heart.  I loved seeing the bovines (cows/steers), the chickens and rabbits, but the goats make me laugh.

Goats living up to the reputation of trying to nibble anything.
Saturday morning I was up with the birds and sun. Headed out for a short run.  This was near my turn around spot. I will never understand how people say they could never live in the country.  The colors of the sky were even better in person.

Sunrise
Old fence piece left from cattle days.
Saturday breakfast was King Arthur GF pancakes, scrambled eggs, and bacon.  I realize as I write this that we didn't have any fruit on the table!  The nieces and nephews (and brother in laws) got Pillsbury Cinnamon Rolls that my sis made.  WHY can't those things be made gluten free?

Lunch was a catered event, a family reunion, and I had fruit!--ha ha.  Roast beast(GF), steamed veggies (GF), and a fruit platter (GF). Very delicious, though I wanted a bit of that hashbrown cheesy gluten dish!

After chatting with family for a few hours and playing with the niece and nephews, I was out of energy.

Sometimes it isn't gluten. . .

Headed to dad's to rest for a bit and then went back to town for dinner with the siblings. I had the Fajitas Hawaiian and am not sure what was the issue, but something was later that night.  I didn't double check the tortillas if they were corn or wheat, but usually gluten hits me 24 hours later, soy within 30 minutes, but this was a few hours later.  It might have been the chorizo, it might have been the oil used, it might have been the greasy food, it might have been. . . . The hardest thing for us to figure out what we ate is when we don't know how it was prepared.  I was dehydrated, but otherwise feeling fine and no issues besides that hour block there and a bit in the morning, so it definitely wasn't gluten (which for me is three days of torture).  It might have been the oil or the fat content of the dish.

The first of a new age group category.

Sunday morning came and with it SUNSHINE again.  My siblings and I decided to do the 5k/10k in a nearby county.  About 30 people started and most were not from the immediate area--which we found interesting/funny.  At the start, I was walking with one down the few blocks of main street until the crushed limestone trail came into view. Then I ran off to try to catch the other sibling--I did. She had knee surgery a few months ago and is suppose to be taking it easy.  I did stay with her, and figured this was a fun run event, not a race really, though it was to be my first race after turning the 'zero' birthday. [I figured it was okay to take it a slow and easy this day, since I was dehydrated from the night before.] It was great to talk with the sister one on one and once her knee got use to the rhythm again, we did run/walk the course. Time was about thirty minutes slower than last weekend, but bonding and friendship is priceless.

Near the start of the race.

The race was followed by a luncheon grill-out at dad's, steak, salad, cukes with dill, grapes, ice cream and gf birthday cake for the dad's "zero" birthday.

Running slug zone and high zone.

Yesterday's run had me feeling down. I didn't realize I was dehydrated until the end, but my running was just quite sluggish and then my shoe started "giving me fits" which is a telling sign for me to DRINK UP (water that is). Might have been down a bit too as I had a doctor visit and they took a couple vials of good stuff from my body.  I also remembered I only had one 32 ounce Nalgene bottle during the day and usually I get at least one and a half bottles consumed.

Today when I got on the t'mill this morning for specific timed miles I wasn't sure how the workout would go. I was hoping it 'd be good. . . In order to pass the time, I set Netflix to Lara Croft Tomb Raider and had a kicking workout with the music and the thrill of the hunt :-)   On the other hand, last time I was on the t'mill, I had a giant frog stuck between the window and the screen in the window well. He was in there moving around a bit but was stuck. At the time,  I  interrupted my workout to go take the screen off so the amphibian could escape. This morning I was worried I'd have to do the same. I had an adolescent bunny rabbit get down in the window well area.  He looked a pretty lost. Then he was staring right in the window at me (which was a bit freaky) and then he hopped around a bit and streeeetched up the metal side and then finally escaped. Phew.

Now, just hoping this doctor can figure out what's up with me and the cold, tired, lethargic feeling going on for over a year!

Beautiful weekend

I was quite excited this weekend.  First, I was going home to see dad. Second, I had found a race and thought dad and I could do some bonding in the car while driving to said race.  The Mike was going to do a long ride on gravel/"B" roads and enjoy some hours with nature.  We had looked at the forecast and the temps were suppose to be in the high 40s, low 50s.  Sounds like a great weekend day, right?

We set the alarm for 5am, packed and drove to my dad's. Only one small stop along the way.  Dad was asking about the race and I could not find the sheet I had printed out. . . so we looked it up online. I knew it was in the county over the river, west of the big city.  I'm rattling off the address, the Mike's looking that up on his phone, then I say, date: "February 17" and  the Mike and dad both say, "that's tomorrow".  Crud.  I was so pepped for this race, trail run with option to do 3, 6 or 13.1 miles.  Has that ever happened to you?  I was so glad that we checked before heading over. I guess it's a good thing that I forgot that printout at my home!  I had wondered why the race didn't start until 1:30pm. If it had dawned on me that the date was Sunday I would have realized it's so everyone can do Sunday morning things and then go race!

The Mike had a brutal day on the bike. We had both packed for 40+ weather and instead it was barely 30º weather.

Instead, I went shopping with dad to the big city, my first visit to Cabela's, a stop at Trader Joe's for some basics that were on sale (their brown rice pasta is awesome. . . and cheap). My sister's family was home when we got back to the house, as was the Mike (who was trying to warm up from being in the wind for several hours).  We had a great roast that dad had prepared, Gluten Free Pantry bread mix in his brand new bread machine, and a fabulous salad. No picture taken, because we were really hungry!

Sunday, I had thought about getting up for a run before church, but didn't like the lack of daylight and the temperature at that time. Instead, dad, niece and I headed to an auction in a nearby town (which is why, of course, I couldn't do the race on Sunday, wink wink!).  We headed to the auction site, let the niece in on some auction techniques and rules (she's still young) and I headed out for a little run. It was almost 50º!!!! Gorgeous day to be out and the only down part was my MP3 player wouldn't play from the off, so it took me a few minutes to get going.
Two mile point, and a gorgeous view

Very low river.  Farmers need the precipitation!

I got back to the auction, got my own bidding number and jumped in for some fun.  It wasn't a great auction with lots of wonders I'd want, but I did score an old crock, and we were able to purchase the sofa table niece had her eye upon for only an Abe Lincoln bill!  Actually, dad and I, as well as plenty of others, were shocked at the prices of many every day items. Many were going for just a few dollars off of brand-new cost.  Basic rule of auction buying: know your prices!

We headed back to the house, had a quick meal of salad with grilled ham and cheese on fresh breadmachine bread and then we packed up and headed back to our house.  Yoga alarm came early this morning, and the quads knows they've had a workout!

Nature on the run

I've been getting back to more running and today I decided to mix it up. . . Run TO yoga class and run HOME!   Since I am scared of absolute darkness (and realistically, who isn't?) my heart rate was a little high running to yoga.  5am, still plenty dark and my headlamp kept me company for about half a mile before the street lights were plentiful.  Gorgeous morning, 56 degrees, a gentle breeze. It was pretty much perfect.  I had my ifitness belt on with a small bottle of Cytomax and a small bottle of water. I knew I'd be out doing something for about two hours today, so I packed some electrolytes and protein.   I walked the last few blocks to class, so I'd be "cooled down" by the time I got there. I'm sure my face was turning red, as it does when I'm finished with exercise (aren't I lucky?).

Yoga was lots of leg work today, and I love that--normally--not so much when I decide to run to/fro though! ha ha.  I got ready to go and headed north towards home. . . Took time to enjoy the ducks (center bottom on rocks) along the river
Then there was another set of ducks on the railroad tracks. You probably can't see the closest one, as she blends in, but daffy's legs are showing at the end of the crossing ties.

I love watching ducks. . .how they look so still and quite on top of the water and they're treading water like a maniac in order to stay "still".

I came crossed a smaller body of water this morning--an area that fills with water during floods and otherwise not much goes out or in--and spied a fairly large pod of minnows or giant tadpoles. It was hard to tell from the trail and when  I tried to get closer they all disappeared further beneath the surface! Reminded me of going fishing with Grandpa B and catching minnows for bait and then emptying and filling the trout line he had set.  He'd never let me watch or help gut the fish at the farm, but would send me in to mom and Grandma B. who'd start the cornmeal breading and have coleslaw to serve.

I never know what Morel mushrooms look like, so I never pick anything wild. I'm pretty sure these are NOT the mushrooms everyone loves this time of year.

Yesterday when I ran out around the lake, I saw a bald eagle on the southern end of the lake diving for breakfast.  It flew off before I got too close and without food as well.  An interesting example of the eagle though, as its head and tail were mottled: mostly white, but some dark feathers still in both areas.

Lake photo via cell phone, no zoom available (sigh)
This morning as I ran toward the northern part of the lake, I spied an eagle sitting on a post at the boat ramp. I tried to sneak up on it, which is very impossible to do, and got about twenty yards away before it flew South across the lake. It was the same specimen, or at least one that was the same age, as the head and tail were partly white and still mottled with black feathers.

Sunday's meal in photographs:
Zucchini --original recipe is boiling, scraping and stuffing the 'logs'... I mixed it up with slicing, boiling, dicing and then mixing with walnuts, feta cheese and an egg.  We were out of breadcrumbs, and who needs those anyway?  Baked up nicely, covered for about 20 minutes, then covered for about 10 minutes.
I also baked up a variety of chicken (breasts and thighs) with seasonings for Sunday's meal and leftover for the week.  Thyme, oregano and pepper on most.
We had a side of cauliflower as well. I'm trying to add in different veggies that we/I normally ignore at the store.
Saturday's meal was :
It might look good in the photo, but the fish was just 'blah'.  Mac and cheese, fresh green beans, diced and boiled sweet potato and then fish with cajun seasoning and some 0% fat Greek yogurt mixed with same seasoning and lemon juice.  The dressing was good, the fish was just. I don't know, it wasn't appetizing to me. I also wasn't all that hungry, so maybe it wasn't good for my taste buds at that precise moment? It is okay though; there were plenty of the potatoes and green beans (and I resisted the urge to eat the left over mac/cheese!)

I lost my energy!

Where did my week and energy go?

Monday night I went to a zumba class with a friend. By Wednesday evening we were both feeling drained, Thursday was tiring, Friday I had nasal congestion, which hasn't left the body yet!   AJ and I figured we touched some surface at the zumba meet place and we were contaminated there.     Wednesday was my first day of Bootless Yoga, as Monday I was sleeping off the Triple D snow half.  That was fun and exciting.  Lots of new stuff to learn. Friday's yoga was different, more stretches and things that made me say, 'oh yeah, I can do this' and then Friday evening/Saturday morning I was needing to stretch again :-D

I emailed my coach and said, 'hey, this is what's happening with my body this week'.  He suggested I pull back on Saturday and do 11 instead of 15.   Thanks to the blizzard we got on Friday (7 inches of snow), I decided to head into the gym, though that was more due to the low temps than anything.  I got 5 miles run, then walked 4 more at 7% incline and then called it a day. I was tired and wasn't going to push myself and just end up sicker!

On the other hand, since I wasn't doing as much exercising, my time for baking/cooking increased!

My drive to work.  Winds, plus snow. We apparently received 7.5" of snow, a one day record. However, at our house, 5 miles from the measuring location, we received about 5 or 6 I would say.  Thankfully, we have eager neighbor kids who are wanting to earn a buck. I no sooner got out of the car, than I had an offer.  I said to come over when it stopped snowing; he showed up a couple of hours later

Cupcakes were on the agenda. I found some recipes at www.cupcakerecipes.com  I made the peanut butter and chocolate chip recipe, which, of course, demanded I make peanut butter and chocolate icing from scratch (Hershey cocoa can recipe with pb added).

YUM!

I won't say how many of these were devoured this weekend.

Next up was Chebe.  This is tapioca bread heaven. I've found using my food processor makes it much easier and a fluffier product.  I used two bags of the product this time, added in chuncks of cheese for something different.

One ran off the pizza stone.

Saturday morning I made egg muffings. I got this recipe from Health-Bent I don't follow Paleo diet (obviously, since I make chebe!); however, I have cut down on the amount of  breads in my diet.  It just makes sense. . . the stuff just sits in your intestines and gains weight. Paleo makes sense, I just can't make myself eliminate so many things that I am able to eat (there are plenty of things I can't eat).

I made more of these tonight. . . I used Hormel ham slices, natural, on Saturday and liked that better since they contained the yoke. I used Hormel Canadian Bacon tonight. I was planning to use the leftover Beeler's bacon, but forgot. I still can't believe I made bacon and we didn't eat the whole package. I'm not sure the last time that occurred.

Tonight I also made a rice bar for hubby. He found the recipe around Christmas time and I just got around to making it tonight.   Sushi rice (2 cups rice to 1.5 cups water), crisp bacon, 4 scrambled eggs and a little soy sauce.  Mix together, press in pan, refrigerate and then cut into bars.  They looked really good. He wanted these for cycling food.

Dinner tonight was chicken soup: 2 smart chicken breasts, carrots, celery, onion, bay leaf, pepper, quinoa (and a little tiny GF pasta--Schar brand), and then chicken stock. YUM!
